Ingredients and spices that need to be Prepare to make Louki aur Chane Dal ki Sabzi / Lau diye Cholar Dal:
- 1/2 cup Dried Chana Dal soaked for few hours
- 3/4 cup Bottle Gourd/ Louki/ Louka/ Lau cut into small bits
- As needed Small pc of Fresh coconut sliced & cut into small bits
- 1/2 tbsp Ginger paste
- 2 Fresh Green chillies or as per taste slitted
- 2-3 tbsps Mustard oil
- 1/2 Tsp Cumin powder
- 1/4 tsp Turmeric powder
- as per taste Salt
- 1/4 tsp Garam Masala powder
- 1 pinch sugar
- 1 tbsp Ghee
- Whole spices (04 nos.)
- 1 Small cinnamon stick
- 1/4 tsp Cumin seeds
- 1 Whole dry Red Chilli
- 1 Bay leaf
- For Garnishing (optional)
- leaves as required Coriander/ cilantro chopped
Instructions to make to make Louki aur Chane Dal ki Sabzi / Lau diye Cholar Dal
- Prepare all ingredients as mentioned above.
- Heat mustard oil in a kadai, fry the coconut bits/ pieces first (I just kept 4-5 pieces in long slices for garnishing, it's optional). Keep aside.
- In the same oil add the whole spices, let it crackle, then add in the soaked Chana Dal and mix. Add in the Bottle Gourd and the chilli also and mix it well.
- Add in the Salt, Turmeric and Cummin powder,add Little water too and give it a mix and bhunno for few minutes but be careful do not dry it and burn. Then add water and cook for almost 40-45 minutes or until the Dal and bottle gourd/ Louki has become soft and mushy (I initially added three cups of water and then after 15-20 minutes again I added 3 cups).
- Smash the Dal with the help of your ladle gently but we don't want a paste and check the consistency, it should not be runny but a little thick consistency. Add Garam masala and ghee give it a quick mix cover it. Put off the flame and let it rest for about 5-10 minutes. Serve hot with Puri / Luchi or Parathas.
